Shrinking Checks Have Restaurants Expanding Hours

Some posh NYC eateries are serving up something they never have before - breakfast.

According to the New York Times, restaurants are cooking up new ways to add to a shrinking profit margin - and breakfast and/or late night munchies are just the ticket.

Says Vicki Freeman, co-owner of Chelsea's Cookshop, which has just added an expanded breakfast service, “Right now we’re not breaking even with this, but we do not need to do a huge amount to make it pay off,” she said. “Maybe $300. We knew it would be a slow go at first, but to do this we don’t have to pay more rent. All it means is an extra shift for a waiter who would be coming in at 10 to work lunch anyway.”

Other creative ways that restaurants are battling these tough economic times? Expect to see more and more prix fixe menus, finger food options, and lower priced bottles of wine.
