The New York Times Dining section today features the work of top food carvers, including James Parker, a leading talent in the art of fruit and vegetable carving. Mr. Parker's work can be viewed this weekend on the Food Network Challenge, where he has competed twice before.

Food carving may seem like a new trend to Americans, but the artform has been alive in Asia for centuries, with many Asian children taught the skill in grade school. “I remember an exam in middle school where I had to carve three pounds of sweet potatoes before I got just the right jasmine flower,” says Ms. Maneeratana, a food carver from Thailand.
